Its early Sunday morning and I currently have homemade chicken stock boiling away on the stove, pizza dough rising, and the oven self cleaning. Today has been quite a busy day. Now let me back up to how this crazy day started. I woke up at 9:50A.M. and headed to work to take care of a few loose ends. I left work around 12:00P.M. and headed to Woods ( a local grocery store- I am not crazy about this store but its the best in town) to get things for my weekend delights. On the menu was Lobster Mac and Cheese and Chicken Stuffing. Purchased what I needed and went home to start cooking. For lunch, I made Chicken Stuffing. This was the easiest and best tasting chicken stuffing. This is how I made it. The other day I made homemade white bread then last night I cut up about 1/3 of the loaf mixed with melted butter, olive oil, oregano, thyme, and pepper. I toasted it off and stored the bread cubes. (These bread cubes are excellent for salad croutons) I took a rotisserie chicken and deboned the white and most of the dark meat. Sautéed onions and celery until tender, added the chicken, and mixed with a couple of cups of chicken stock. Mixed the chicken mixture with the cubes and viola - Chicken Stuffing. I put it back in the 12" skillet which I had sautéed the chicken mixture and baked for about 40 minutes on 350. I put the chicken carcass in the freezer and thats another recipe. I am sure you are wondering how was that Lobster Mac and Cheese. I made the mac and cheese from Ina Garten's recipe which can be found here. It was very tasty. Her recipe calls for 4 cups of la gruyere cheese- that is very expensive. I used 2 cups of that cheese and added 2 cups of mild cheddar along with the vermont sharp white cheddar. After consuming the Lobster Mac and Cheese was still not over. I have decided to make Garten's White Pizzas with Arugula. Instead of making the dough tomorrow I opted for doing that part tonight and just refrigerating the dough. Instead of her Arugula salad I am going to make a Honey Lime Vinaigrette with Spring Fix for the top of the Pizza. I will post more about tomorrow. The recipe calls for the oven to be at 500 degrees so I am currently letting the self cleaning cycle run before going to bed. I am also making homemade chicken stock from the rotisserie chicken carcass from earlier!! What a day!!! I personally wouldn't have it any other way! Until tomorrow have a great night and eat something for me!
